1-1/2 to 1-3/4 lb. pork loin
Salt and pepper
2C Cascade Winery Apple Wine
1 T peeled, diced fresh ginger
1 Sprig of fresh rosemary
Pat pork loin dry with a paper towel to remove excess moisture. Season with salt and pepper, then roast in a 350 degree oven for 30-40 minutes or until internal temperature reaches 160 degrees. Remove from oven and let rest for 10 minutes.
Combine the remaining ingredients in a sauce pan and bring to a boil; reduce heat and cook on low until the sauce has reduced to a syrup-approximately 1/4 cup.
Drizzle the sauce over the sliced pork tenderloin and serve. Serves 4-6 |
